Hinckley’s Orange & Blackberry sponge
Not only was Grandad a fantastic chef, he was an incredible baker. Every time we would visit he baked a traditional Victoria sponge cake, with lemon curd or berry filling. The Victoria Sponge cake is a little more dense and certainly a lot less sweet than it’s distant US cousin, the “butter”, “yellow” or “white cake”. Named after queen Victoria, the cake is often layered with a fruit jam and clotted cream filling. Inspired by Grandad’s traditional sponge, we added orange zest to our batter, smeared Maine Jam and Jellie’s seedless blackberry jam in the middle of two sponges., topping it off with our signature orange infused cream cheese frosting, orange zest and a dusting of cinnamon and nutmeg.
